A good roast should disappear. You should taste the hillside in Huila, not our machine.
We buy from eleven producers we visit in person, paying an average of 2.4x the Fairtrade minimum. Contracts are multi-year so farms can plan ahead.
Avg. FOB price paid 2025: $6.85 / lbEvery lot is cupped on arrival and again after resting. If a coffee doesn't score 86 or above with our whole team, it doesn't make the shelf.
Minimum SCA score: 86.0Our 1964 Probat UG-15 runs gentle, 11-minute profiles that keep acidity bright and sweetness long. Each profile is logged and tweaked batch by batch.
Batch size: 12 kg · Profile: 10:40–11:30Beans rest for 72 hours to degas before packing in compostable valve bags. Roast date is stamped on every bag – never a "best before".
Roast days: Tuesday & FridayNo laptops after 11 on weekends, plenty of window seats, and the same menu at both.
