Note du chef

Six seasons, not four

We rewrite the menu every eight weeks, following the old Burgundian calendar: early spring, late spring, high summer, harvest, autumn and deep winter. Each change begins with a phone call to the twelve farms we buy from.

Dietary requests − pescatarian, vegetarian, gluten-free, dairy-free − are welcomed with 48 hours' notice.
